Why not fire up your Monday with something spicy and delicious? I bought some Jalapeno peppers in bulk and thought why not use them to make poppers. I found this recipe for them at Allrecipes.com I was looking for something simple that can be made in a short amount of time with as few ingredients as possible.
I scraped out most of the seeds but left a few for a little kick. I used Morningstar Farm's veggie bacon to wrap around them and Philadelphia cream cheese for the stuffing.
These poppers were divine! There was a little bit of heat but the cream cheese mellowed the fire. The veggie bacon wrapped around them was nice addition and my first time using veggie bacon in this manner.
So maybe today you'll fire the Monday blues away and kick up your evening with some heat and maybe a cold glass of beer. Cheers!!

Kids and their allowance..
The crew over at Get Rich Slowly posted a great article on the subject of kids and allowance. I have always had a couple preconceived ideas about how allowance should work once my kids are old enough to start earning one, but this article opened my eyes and made me realize that some of those ideas may be misguided. Meatless Monday-Jalapeno Poppers!!
