Yes, we have been away for a while. With birthday parties, especially our special one, family from out of town and house redecorating, we have been really busy. Now we are back!To start off the week on the right foot, let's start with some delicious food! Swiss chard is on the menu today. Never heard of it? Don't know what it is? Never fear a vegetable you have never eaten!
Swiss chard is in the same family as most leafy greens, like kale, mustard and collard greens. Typically you can interchange chard in any recipe that calls for another type of green. Chard is also full of vitamins A, C and K. It is a tall leafy green vegetable with a thick stalk that comes in white, red or yellow with fan-like green leaves. Chard belongs to the same family as beets and spinach and shares a similar taste profile: bitterness of beet greens and slightly salty flavor of spinach leaves. Both the leaves and stalks of are edible.
I typically like to saute them in olive oil along with garlic, crushed red pepper and either onions or shallots. I will either serve them over rice or fold them into pasta. With a side salad, I have a complete meal!
