This works well for a first course or for a light lunch along with a salad or for dinner with roasted potatoes and salad. I usually find the nice thick looking asparagus at farmer's markets but sometimes supermarkets get a good batch. I use a grill pan with olive oil on medium high heat but a saute pan will work as well. I wash and trim the asparagus and wrap the veggie bacon around 2-3 pieces to form a bundle (depending on how thick the asparagus is) and place on preheated grilled pan. I like my asparagus and most of my veggies to be al dente, crunchy, so don't overcook the asparagus to where it looks sad and wilted. It doesn't take long for the veggie bacon to be done (read package instructions), usually the asparagus is too. If I have thick asparagus, I will blanch the asparagus for about a minute, let it cool and dry it before I wrap the veggie bacon around it and grill it. When done I will sprinkle it with a little black pepper and balsamic vinegar. I don't add any salt because the veggie bacon has enough salt in it. I love having red roasted potatoes and a nice salad with tomatoes, cucumbers and carrots along with a nice dressing to complete the meal. Buen Porvecho!

Meatless Monday: Grilled Asparagus with Veggie Bacon

Eating Late
Yeah, yeah, yeah...I know that I shouldn't be eating at 1am, but golly I am hungry! I am sure after I get this sandwich in my belly, sleep will come and so will the crazy dreams. I feel that I am just listening to my body and my body is saying feed me!! So screw anyone shaking their heads at me.
While making my sandwich, I did hear my mother's voice saying that "if you eat after midnight, you'll have nightmares". I don't know if I would call them nightmares, but perhaps it's true or maybe hearing that growing up, I've conditioned myself into believing that the craziest of dreams occur when I eat really late. Of course eating late is not a norm for me, usually I am in bed by now. With knowing that I don't have to work in the morning, it's my guilty pleasure to stay up late (besides the three hour nap earlier and some extracurricular activities have reenergizes me), I am awake and was hungry. So here is my late night fixin....
1/4 piece French bread
Couple of slices of Tofurky
Some Romaine lettuce
Small amounts of sprouts
1 Tomato
Carrot slices
Mayo & spicy mustard
Bon Appetite and Good Night!!!
